Just thought I would get around to posting this scrumptious recipie...great for those who have lots of rhubarb and strawberries! We usually cut the recipie in half. The full recipie will serve 6.
Prep time 20 min + cooling
2 c. diced fresh or frozen rhubarb
1/4 c. water
4 Tbs honey, divided
1 1/2 c. vanilla ice cream
1 c. milk
1 c. fresh or frozen strawberries
2 pkgs (3 oz. each) cream cheese, cubed
1/2 c. vanilla yogurt
1/4 c. confectioners' sugar
5 ice cubes
In Large saucepan, bring the rhubarb, water and 2 Tbs honey to a boil. Reduce heat; cover and simmer for 5 to 10 minutes or until rhubarb is tender. Remove from the heat; cool to room temperature.
In a blender, combine the ice cream, milk, rhubarb mixture, strawberries, cream cheese, yogurt, confectioners' sugar, ice cubes and remaining honey; cover and process for 1 minute or until smooth. Pour into chilled glasses; serve immediately.
